I was walking down 12th Avenue on Capitol Hill one evening, past Lark, one of my favorite restaurants in Seattle. Because Chef John Sundstrom is known to adhere to Slow Food principles (which is hard to argue against), I was taken aback by bullhorn-blaring protestors outside.
Turns out they were voicing their opposition to the presence of foie gras on the menu. And it happens I'm not the only one who is paying attention -- this disagreement was featured this week on NPR.
No doubt foie gras is a controversial issue. But I can see both sides of the debate. Animal rights groups don't like it because the birds are fattened through force-feeding that enlarges their liver. While chefs are saying that they are serving a legal product, so the dialogue should be aimed at the legislature, instead of harassment of diners who may or may not be ordering foie gras.
